Red Velvet Molten Lava Cake

A crowd favorite that’s Valentine’s Day approved. There is nothing better than made-from-scratch molten lava cakes that aren’t complicated to make and require only a wee bit of time before enjoying this decadent treat.

Servings: 2
Ingredients
Red Velvet Cake Batter:
• 1/3 cup Semisweet Chocolate
• 2 tbsp. Olive Oil
• 1 large Egg, whisked
• 2 tbsp. All Purpose Flour
• 1/4 tsp. Salt
• Red Food Coloring

Cream Cheese Filling:
• 1 oz. Cream Cheese, at room temperature
• 3 tbsp. White Chocolate, melted
• 2 tbsp. Granulated Cane Sugar
• 1/2 tsp. Vanilla Extract
• Red Food Coloring

Instructions
Cream Cheese Filling:
1. In a small bowl, mix together all ingredients until well combined. Spoon into a pastry or icing bag. Set aside.

Red Velvet Cake Batter:
1. Preheat oven to 425F. Prepare two ramekins by greasing each, then dusting with a mix of flour and sugar (or line two muffin tins).
2. Melt the semisweet chocolate with the olive oil in either a double boiler or in the microwave. Transfer to a bowl, then add in the whisked egg, flour, and salt. Mix until combined. Add red food coloring until your desired shade of red.
3. Evenly pour the batter into the two prepared ramekins.
4. Pipe the cream cheese filling evenly into the center of the cake batters.
5. Bake for 8-10 minutes, until the edges are firm but not the center. Allow the cakes to cool for 2-3 minutes before dusting with powdered sugar to enjoy warm.
